1. Brinjal – 250gms

2. salt

3. Chilli powder

4. Asafoetida – a pinch

5. mustard seeds – 1 spoon

6. Oil

How to prepare:

1. Seasoning: In a kadai, heat oil, add mustard seeds, asafoetida.

2. In a microwave proof utensil, add finely chopped brinjal, salt to taste, chilli powder to taste and seasoning.

3. Mix well.

4. Add little water or tamarind juice (1 spoon)

5. Microwave in power high for 7 minutes.

6. mix well and micowave for 2 minutes.

7. Add curry leaves.

8. Tasty brinjal curry is ready. It can be used as a sidedish with rice.
