Navarathiri Special Day 4 – Peanut Sundal

Peanut Sundal 

Its Navarathiri time and am celebrating and posting Navarathiri special delicacies in my blog. Please check out day 1, day 2 and day 3 Neivedhyams. For day 4 we prepared everyone’s favorite ‘Peanut Sundal’. I soaked the peanuts for 8 hours.

Peanut Sundal

Ingredients:

1. Peanut – 1/2 Cup (Soak overnight in water)

2. Coconut powder – 1/4 cup or lesser per taste

3. Shredded Carrot – 1/2 carrot

4. Salt to taste

5. Oil to temper

6. Mustard Seeds – 1/4 tsp

7. Asafoetida – 2 pinch or a small bark

8. Red chilli – 1

9. Coriander leaves

Preparation:

1. Soak peanuts in water overnight.

2. Drain the water after 8 hours and pressure cook with required salt for 4 whistles

3. After the peanuts are cooked, discard the water. In a pan, heat oil. Once the oil is hot, add mustard seeds, red chilli and asafoetida.

4. Carefully add the peanuts and stir well. Add coconut powder and shredded carrots

5. Transfer to a serving bowl and garnish with coriander leaves
