Condensed Milk Coconut Cake

Condensed Milk Coconut Cake I had a tin of sweetened condensed milk lying in the fridge. So when we had a sweet craving today it came in handy. I didn’t want to prepare my usual coconut ladoos and started looking for a recipe. Found this recipe in Nestlé’s website. It worked great for us after minor tweaking.

Ingredients: Nestle or any other brand sweetened condensed milk – 1 tin dessicated coconut – 1 cup butter – 1 tbspn water – 1/4 cup saffron – 4 to 5 strands food color – 1 pinch   Preparation: 1. Soak saffron strands in 1/4 cup hot water 2. Melt butter in a pan. Add condensed milk and stir for 2-3 mins so that it doesn’t catch up to the pan. Keep the heat at low 3. Add 1 cup dessicated coconut and stir for 5 mins 4. After 5 mins you will notice that the condensed milk and coconut have mixed well 5. Grease a square flat tray with butter 6. Pour one half of the condensed milk- coconut mix into the tray 7. To the remaining half add saffron soaked water and mix well in low heat. 8. You will notice a light yellow color. Add a pinch of food color. I added red food color. Mix well and pour on top of the white colored sweet. 9. Pat and level 10. Store it in refrigerator for an hour 11. After an hour, cut into squares and serve
